Recent baking

Hello everyone!

I intend for this to be a place to keep track of all my baking attempts (including recipes) and to mull over potential improvements/alterations in attempt to appeal to the greater good (ie my stomach). Most of my recipes are sourced from other blogs or other internet sites..

My procrastination haven awaits!

Here are a few recipes I have trialled in recent times:

Joy's Lemon Glazed Spice Cake - this vegan recipe was incredibly delicious. Very moist and spicy and the lemon glaze was a perfect topping.

101 cookbooks Healthy Cookies - another vegan recipe (no, I'm not vegan). These turned out fairly tasty. They weren't very sweet as indicated but were great to snack on. They had an unusual texture and were very moist. I substituted dried, sweetened cranberries for the chocolate but if I make them again I think I'll include both!

Not Quite Nigella's Zebra Cheesecake - yum! The comments regarding difficulty scared me so I halved the recipe. It was probably a good thing as I didn't seal the springform tin well enough so the base was a tad soggy but otherwise it wasn't terribly difficult! This is actually a Japanese cheesecake so is very light and moist. It wasn't very sweet (according to my huge sweet tooth) so I whipped up a basic icing with butter, water and vanilla and topped it with some shaved dark chocolate. See the un-iced cake below:




Technicolor Kitchen's Strawberry Crumble Bars - these were quite delicious and super easy to make. I halved the crumble topping and put less sugar in the strawberry mix and they were still adequately sweet. They were amazing when heated up with a side of ice-cream.



I also attempted some chocolate macarons for the first time recently. They had feet but they retained little peaks in the centre due to the piping so I'm assuming I over-beat the eggs. Will try them again soon. I used aspects of a Masterchef recipe and one of the first recipes that came up after googling macarons.

Next on my baking wish-list: anything with caramel, coconut, lemon and/or raspberries.
